Hot Chocolate with Guinness, Whiskey, and Baileys
Adapted from Serious Eats

Ingredients
12 ounces Guinness
1/4 cup cocoa powder
1 tablespoon granulated sugar
1 pinch sea salt
3 cups whole milk
4 ounces Guittard milk chocolate chips
4 ounces Guittard bittersweet chocolate chips
4 ounces Bailey’s Irish Cream
4 ounces Irish whiskey

Directions
Reduce the Guinness to half a cup by pouring it in a medium saucepan and setting over medium-high heat. (about 10 minutes) Remove from the heat, and set aside.

In a medium saucepan, stir the cocoa with sugar and salt. Stir in just enough milk to make a paste, and place over medium-high heat. Add the remainder of the milk and stir to incorporate. Add the milk chocolate and bittersweet chocolate. Continue heating over medium heat until while stirring continuously, until the chocolate is melted and the mixture is hot. Gently whisk to completely homogenize the mixture.

Next, add the Bailey’s followed by the reduced Guinness and whiskey. Whisk until frothy using a hand blender or whisk.

Pour into individual teacups or mugs, and serve immediately.
