Knudsen Cider & SpiceEnjoying a delicious cup of warm, spiced, apple cider can take the chill out of autumn–or at least simulate autumn in October for us Bay Area residents. Cider and Spice is guaranteed to get you in the mood for all things October and Halloween. And the scent of it warming on the stove top fills the kitchen with those wonderful memories of mulling spices.

Cider and Spice is an excellent alternative to hot chocolate as an easy way to warm you up on misty mornings–you just open the bottle and pour.

Grilled Spiced Apple Jamaican Jerk Chicken
We found this Knudsen recipe for grilled chicken using Cider and Spice in the marinade. Enjoy!

Ingredients
1 tablespoon chopped fresh ginger root
4 cloves garlic chopped
1 medium red onion chopped
2-3 habanero or jalapeño peppers stemmed and seeded*
2 tablespoons soy sauce
3 tablespoons extra virgin olive oil
1 tablespoon salt
2 teaspoons ground black pepper
3/4 teaspoon ground nutmeg
2 cups R.W. Knudsen® Cider & Spice Juice
3 pounds chicken pieces (breast halves, thighs, drumsticks)
non-stick cooking spray

Directions
Place all ingredients except chicken pieces in blender container. Blend until smooth. Add chicken pieces to two large resealable food storage bags. Divide marinade between bags. Seal and refrigerate overnight.

Coat grill grate generously with cooking spray. Heat grill to medium. Remove chicken from marinade, discard marinade. Grill chicken, turning occasionally until internal temperature reaches 165ºF, about 20 to 30 minutes.

*Use gloves to stem and seed peppers.
