The Jalisco CocktailThis combination of fresh mint and cucumbers with citrus, tequila, and a pinch of salt is a fine way to kick off summertime. And the Jalisco is a wonderful accompaniment for your Cinco de Mayo celebration (and Mexican cuisine in general).

The Jalisco
Yields one drink

Ingredients
2 oz. blanco tequila
1 oz. fresh lime juice
3/4 oz. simple syrup (1:1)
1 mint sprig
1 slice cucumber
A healthy pinch of salt

Directions
Combine all ingredients in a cocktail shaker and lightly muddle. Shake with ice cubes, strain into an ice-filled rocks glass.

To make the garnish, cut a cucumber in half lengthwise and, using a carrot peeler, make a long, thin slice along the center. Gently thread the slice through a long toothpick or cocktail pick, and garnish with a mint sprig. Alternately you can use a simple cucumber wheel.

Simple Syrup
To make the simple syrup, combine 1 cup of sugar and 1 cup of water in a medium saucepan. Bring the mixture to a boil, stirring continuously, until all the sugar has dissolved. Allow the syrup to cool before using.
