Blackberry Prosecco Punch

Then they are topped with ginger beer and bubbly Prosecco. This makes for a simple and elegant spring cocktail. It is perfect for a holiday brunch. The bubbly Prosecco keeps everyone coming back for seconds.

If you don’t have fresh berries, use frozen. Just give them time to begin to thaw. You can also garnish the drink with additional frozen berries instead of ice.

Blackberry Prosecco Punch Recipe
Adapted from Half-Baked Harvest
Yields 8 servings

Ingredients
1-1/2 cups fresh or frozen blackberries
1 cup fresh mint leaves
Juice from 2 limes
1-1/2 cups vodka
16 ounces ginger beer chilled
1 bottle Prosecco or sparkling wine

Directions
In a pitcher, muddle the blackberries, mint, and lime juice, smashing everything to release the juices. Add the vodka and stir to combine. Chill until ready to serve.

To serve
Pour the blackberry vodka mixture into stemmed glasses with ice (or frozen berries). Top each drink with the ginger beer and Prosecco. Garnish with mint and blackberries. Enjoy!
