Boozy Watermelon SlushyThis updated frozen cocktail relies on fresh watermelon—and we recommend finding the ripest seedless watermelon available. Our slushy keeps the flavor of watermelon in the forefront with the citrus of the Aperol balancing the warmth of the tequila. For a visual twist, try it with yellow watermelon.

This is a great summertime drink for enjoying with company on a hot afternoon.

Boozy Watermelon Slushy
Yields 1 pitcher 

Ingredients
4 cups seedless watermelon
1-1/2 ounces Tres Agaves Blanco Tequila
1 ounce Aperol
sparkling water
small watermelon wedges for garnish

Directions
Do ahead

Cut 4 cups of seedless watermelon into 1/12-inch cubes and freeze them separated on a tray for at least 4 hours. Chill your glasses in the freezer.

Make the slushy
Place the watermelon, tequila, and Aperol in a blender and puree until smooth. Adjust the stiffness with a little sparkling water at a time. Remember that the slushy will continue to melt once it is served.

Scoop it out into your chilled glasses. For a garnish, make a slit in a thin wedge of watermelon to fit over the lip of the glass.
