Happy Mother’s Day!

Swedish Pancakes are served folded with butter and dusted with confectioners’ sugar. They are also great with a squeeze of lemon, or a smear of jam, or berries on the side.

Stuffed French Toast is simply out of this world. French Toast stuffed with Marscapone cheese and flavored with orange zest, cinnamon, and nutmeg—you have to try it!

Featherbed Eggs are layers of bread and custard with the addition of cheese or fruit or a favorite something. The joy of this dish is that it must be prepared the day before, or at least six hours before baking, so it is ready well in advance.

Eggs Sardou is the creation of iconic Antoine’s restaurant in New Orleans and consists of poached eggs, creamed spinach, artichoke hearts, and hollandaise sauce. It is sometimes served on a bed of asparagus or on crusty bread.

Cashel Blue, Spinach and Smoked Salmon Tartlets recipe originates from David Foley, chef-owner of the Wild Geese Restaurant in picturesque Adare, County Limerick in Ireland. But, here we use frozen filo dough shells rather than hand made pastry for easier preparation

Berrylicious Sweet Rolls are not as sweet as you would think. But, they are definitely worth the work for a morning treat. Start these the night before for a fantastic morning treat. Set them to rise in the fridge overnight, and just pop them in a preheated oven in the morning.

Peach Scones are a perfect tasty treat for Mother’s Day brunch, or just because. And, the peaches are there to remind you that summer is not too far away.

Baked Rhubarb with Earl Grey Tea, Cardamom, and Orange Zest is delicious on biscuits or over yogurt. The rhubarb and citrus complement each other beautifully. And the Earl Grey tea is delicious!

Fresh Strawberry Chia Jam is a fresh, spreadable, strawberry substance that could be just as well eaten with a spoon. Once you have the basics down, try it with different fruits and berries, and play with the flavors.

Enjoy brunch with mom this weekend!
