Brut
A crisp and full-bodied sparkling wine which has developed rich complexity and fine mousse. The allure of toasty finish from twenty-four months on tirage, is a complement to the sophisticated apple and citrus flavor. Winemaker’s Note: Brilliant with ultra fine bubbles. A wonderful fine bouquet dominated by green apple and grapefruit flavors.

Blanc de Blancs
The restaurant top 50 Wine & Spirits most popular sparkling wine by the glass

The rich and toasty character of the Blanc de Blancs is balanced and superb. Aged for two-year minimum, the palate is developed and shows rich complex flavors. Aromas of brioche & green apples that follow through on the palate. Flavors of lemon zest, honeysuckle & tropical fruit. Crisp fresh finish.

A fine salmon color, aggressive mousse and a lovely fruity wine with plenty of immediate charm and toasty aromas. There is also an explosive juicy flavor of raspberry.

Low
Crémant d’Alsace Brut Rose Domaine Allimante-Laugner     $20.99
Based on Pinot Noir the NV Crémant d’Alsace Rosé Brut has a very pale color with just a hint of rosé. Very delicate fruit aroma with hints of red berries and flowers on the very subtle, fresh and elegant nose lead to a full-flavored and quite expressive palate. The wine is quite powerful and fruit intense but in a discreet and elegant way. Firmly structured but provided with fine bubbles and an aromatic aftertaste there is really finesse in this very well-made and distinctive sparkling wine.

Medium
J. Lassalle Champagne Brut     $34.99
This buoyant Champagne shows an almost ethereal quality, with a fine mousse and vibrant acidity supporting a fragrant range of apple blossom, anise, juicy white cherry and pickled ginger notes. Chalky finish. —Wine Spectator

High
Taittinger Champagne Brut     $59.99
Traditionally elegant and floral, La Francaise is made with a higher proportion of Chardonnay, giving it crisp citrus and white flower notes. A classic Champagne worthy of its place in the pantheon of great sparklers. Active on the palate, with bright core fruits and zesty citrus and mineral flavors.

A fine, lacy mousse and delicate flavors of poached apple, blackberry, beeswax and lemon confit underscored by a streak of smoky minerality that echoes on the finish. Showing class and style, the nonvintage Taittinger Brut La Francaise Champagne offers stunning richness while exhibiting excellent overall balance.

The winery notes, “(this wine) contains a higher proportion of the finer Chardonnay grape than other nonvintage Champagnes, giving elegance and freshness to the wine.”
