This Gin & Cuke Cooler takes the traditional Gin & Tonic to a new dimension. The simple addition of cucumbers shifts the flavor in a great direction, and fresh lime makes it more summery.

The best thing might be that the cucumbers pickle slightly after sitting in your glass, and are a delicious treat when the drink is finished.

We love using St. George Spirits Botanivoir Gin, as it adds a layer of herbal flavor, and Fever Tree Tonic Water is a favorite mixer.

Gin & Cuke Cooler
Serves 4

Ingredients
8 ounces St. George Spirits Botanivoir Gin
8 tablespoons fresh lime juice (approximately 4 limes)
1/2 cup thinly sliced Persian or English cucumber with peels on
Fever Tree Tonic Water
Lime wedges for garnish

Directions
Combine the gin, lime juice, cucumber slices, and a small amount of ice in a cocktail shaker, and shake vigorously for about 2 minutes. Pour the mixture into ice-filled glasses, making sure cucumber slices are evenly distributed.
Top with tonic water, and garnish with a lime wedge.
