How do I grill the perfect steak?
Make certain your beef is out of the fridge about an hour before grilling so it reaches room temperature before it hits the grill. And, always grill over medium heat. If the flame is too high, or the coals are too hot, the beef may overcook on the outside before the interior reaches the desired doneness.

If you are using a charcoal grill, light the briquettes 30 minutes in advance. And begin grilling when coals are covered with a light ash and are no longer flaming.

After cooking, allow your steaks to stand for 5 to 10 minutes before serving. While standing, the internal temperature will rise about 5 degrees. Be sure to keep that in mind to avoid over-cooking and reach your desired doneness.

How do I know if my rib eye steak is done?
Medium-rare is 5-1/2 to 7-1/2 minutes per side; no longer than 15 minutes total cooking time. And medium is 6 to 8 minutes per side; no longer than 16 minutes total cooking time.
