Lime and Mint Daiquiri

Lime and Mint DaiquiriThis Lime and Mint Daiquiri will refresh on a hot day—and is perfect for an outdoor Memorial Day festivities. It has a distinctly South American flavor.

The simple syrup is easy to make and can last in the fridge for at least a week. So, start celebrating the long weekend!

Lime and Mint Daiquiri
Yields one drink

Ingredients
2 oz. dry white rum
1/2 oz. freshly-squeezed lime juice
1/2 oz. simple syrup
2-3 fresh mint leaves

Directions
Muddle the mint in the bottom of a glass or cocktail strainer.

Combine the rum, lime juice and simple syrup with ice, shake, and strain into a chilled cocktail glass. Garnish with a mint leaf.

To Make the Simple Syrup
In a medium saucepan combine 1 cup raw sugar and 1 cup water. Bring to a boil, stirring, until sugar has dissolved. Allow the syrup to cool to at least room temperature before using.

Store in a jar in the fridge.
