How To Grill Perfect Planked Salmon

Don’t oil the plank. This causes flames and excess heat, and makes the fish skin come off the plank—you want it to stick for easy removal.

Choose a piece of salmon that covers as much of the surface of the plank as possible.

Soak your plank for about an hour. And remember to weight it down to keep it submerged.

Brine the salmon for about an hour by dissolving half a cup of salt in 6 cups of water.

Keep your seasoning simple. You can rub the fish with freshly minced garlic, then pack the top with a bit of brown sugar. The brown sugar caramelizes the fish and helps maintain its color. Use salt and fresh pepper to taste.

Place your plank with the seasoned salmon on the grill at 450º F. Close the lid to keep in that flavorful smoke until the fish is done. For a salmon fillet that is an inch thick, this should take less than 10 minutes.
