Be certain to make the vodka-infused apricot jam in advance, but they are so tasty you might decide to keep a jar on hand all the time. Imagine all the other uses…like on top of ice cream.

Spiced Mango Apricot Cocktail
Yields one drink

1.5 ounces Skyy Vanilla Vodka
1 Tablespoon Vodka-Infused Apricot Jam (recipe follows)
4 ounces mango juice
2 teaspoons fresh lime juice
Few drops of orange bitters
1 cinnamon stick
sprig of mint
crushed ice

Add all the ingredients except the cinnamon stick into a shaker.

Fill the shaker to the top with ice cubes and shake to blend. Strain into a tall glass. And fill the rest of the glass with crushed ice.

Heat the cinnamon stick with a lighter until you can smell the fragrance of the cinnamon oil. Stir the drink with the cinnamon stick, then use it as a garnish with a slice of mango and a sprig of mint.

Vodka-Infused Apricot Jam
Make the apricot jam at least one day in advance. Take a handful of dried apricots, put them in a glass jar, and cover with Skyy Vanilla Vodka. Seal the jar and allow them to steep at room temperature overnight or until they are nice and soft. Blend the mixture in a blender. Adjust with additional vodka if needed to get the right consistency for blending.
