Spiced Pear and Bourbon Sparkler

This Spiced Pear and Bourbon Sparkler cocktail is just the thing for a holiday dinner or a random Thursday evening. The warming spices, ginger, cinnamon, and cloves, blend beautifully with the fresh pear flavor and brown sugar in the syrup. The bubbliness of the Prosecco adds an air of celebration.

Spiced Pear and Bourbon Sparkler Recipe

Yields 1 cocktail

Ingredients
For the Spiced Pear Simple Syrup
3 ripe pears blitzed in a blender with
3/4 cup of water
2-inch nub of fresh ginger
2 cinnamon sticks
3 cloves
1/4 cup Brown Sugar

For the cocktail
1-1/2 ounces ounces Spiced Pear Simple Syrup
1-1/2 ounces Bourbon
1/2 ounce freshly squeezed lemon juice
1-2 ounce Prosecco
Ice
Chilled Coupe Glass

Directions
Make the Spiced Pear Simple Syrup
Core and remove the seeds from the three ripe pears. Place the pears in a blender with the 3/4 cup of water. Blend until it is the consistency of cider.

Peel and slice the nub of ginger

Combine the blended pears, ginger, 2 cinnamon sticks, and 3 cloves in a pot. Cover and let simmer over low heat (about ten minutes). Remove the pot from the heat and add 1/4 cup of lightly packed brown sugar. Stir until the sugar is fully incorporated.

Allow the Spiced Pear Simple Syrup to cool, then strain. You can make the pear syrup in advance and store it in the refrigerator for up to one week.

Mix the cocktail
Pour the bourbon, Spiced Pear Simple Syrup, lemon juice, and ice into a cocktail shaker. Shake until the surface of the cocktail shaker is cool to the touch (about 30 seconds).

Strain the drink over a chilled coupe glass, and top it with the Prosecco of your choice. And, garnish with a thin pear slice.
