Spring Thyme Sparkling CocktailThis Spring Thyme Sparkling Cocktail Recipe is fancy enough for a holiday brunch, and delicious enough to drink on its own. We love the herbal flavor the thyme syrup imparts to this simple, sparkling cocktail.

Spring Thyme Sparkling Cocktail Recipe
Yields one cocktail 

1 oz. Tanqueray Gin
1 oz. thyme syrup
Mum Napa Sparkling wine
sprig of thyme and a fresh berry for garnish

Combine the gin and syrup in a shaker with ice, and shake to mix and chill. Strain the mixture into a champagne flute and top with sparkling wine. Garnish with a sprig of thyme.

To make the Thyme Syrup
Add 1 cup of water and a few sprigs of thyme to a saucepan. Bring the water to a boil. Reduce the heat and allow it to simmer for 15 minutes.

Add 1 cup of white sugar and stir until it dissolves. remove from the heat. Allow the thyme syrup to cool for about 20 minutes before straining and discarding the thyme.
