Strawberry Fields CocktailThis is one of those recipes that you need to start a week ahead, but it is oh-so-worth the planning! We recommend you infuse the rum this weekend so you can enjoy the cocktail over the 4th of July holiday weekend. And, having some strawberry-infused rum in the fridge does not sound like a bad thing. We bet it will inspire other uses.

Strawberry Fields Cocktail Recipe
Yields one cocktail

Ingredients
1-1/2 ounces strawberry-infused white rum
1/2 ounce Campari
3/4 ounce fresh-squeezed lime juice
3/4 ounce simple syrup (1:1)

Directions
Shake all of the ingredients together with ice in a shaker, then strain into a rocks glass over fresh ice. Garnish with a strawberry slice.

Strawberry-Infused White Rum
Ingredients
15 to 20 fresh strawberries
750 Ml bottle of white rum

Directions
Cut tops off of the strawberries, and slice them into thirds. Place them in a large jar or container with a lid and add the contents of the bottle of white rum. Place it in the fridge, covered for 4-7 days.

Strain out the strawberries before using and store the infused rum in the refrigerator.

Note: You can half this recipe (half a bottle of rum and 8 to 10 fresh strawberries) if you would like to use the white rum in another cocktail.

Simple Syrup
You can purchase simple syrup, but it is easy to make your own at home. We recommend you use white sugar to keep the color pure.

Ingredients
1 cup sugar
1 cup water

Directions
Combine the sugar and water in a small saucepan. Cook over medium heat just until the sugar is completely dissolved. Turn off the heat and allow the syrup to cool completely. Store the simple syrup in a covered jar in the refrigerator for up to 1 month.
