Sweet Corn Cocktail

This decidedly summery Sweet Corn Cocktail is a great way to enjoy the flavor of fresh corn off the cob. It is milky, sweet, and so refreshing. Perfect for a picnic or for sipping outside on a warm day.

Sweet Corn Cocktail Recipe
Yields 1 cocktail

1/4 cup fresh corn kernels
1/2 ounce freshly-squeezed lime juice
1/2 ounce Demerara Syrup (see recipe below)
1/2 ounce dark rum
3 drops bitters

Muddle the corn kernels hard in a cocktail shaker until they become creamy and milky. Add the lime juice, Demerara syrup, dark rum, and bitters. Then fill the shaker with ice. Shake hard for 20 seconds.

Double-strain the cocktail into a glass and serve.

Demerara Syrup
1 cup demerara or turbinado sugar
1 cup water

Combine the sugar and water in a small saucepan over medium heat and stir until the sugar dissolves. Remove the pan from the heat and allow it to cool to room temperature. Transfer the syrup into a clean glass jar.

Cover and keep refrigerated for up to 2 weeks.
