Delicata Squash

Delicata SquashA lazy cook’s dream…

The small size of Delicata Squash makes it easy to manage, and they are a cinch to clean, slice and cook. Their flavor is rich, and their texture more creamy than many larger squashes. Delicata can be used where butternut and acorn are called for in recipes.

Not all winter squash require peeling, including delicata. They can go directly into blended soups without the hassle of removing the skins, like in this Curried Squash Soup. They are great roasted (Crispy Delicata Rings with Currant, Fennel, and Apple Relish), in a stuffing (Corn Bread and Squash Stuffing by Mark Bittman), or a gratin (Potato and Squash Gratin). They give flavor to main dishes such as this Borlotti Bean Mole with Roast Winter Squash from 101 Cookbooks, or these Pork Chops and Squash with Pumpkin Seed Vinaigrette. And delicate squash are elegant on the table, Stuffed with Mushrooms, Farro, Pecans & Dried Cranberries.

Come by the store, and pick up a bunch while. You’ll be so happy you did!
