Hawaiian Ginger Ale Mocktail

This all-ages Hawaiian Ginger Ale Mocktail is refreshing and delicious. Carefully boiling fresh ginger in water for a good, long while is the key to rounded, deep flavor.

Hawaiian Ginger Ale Mocktail Recipe
Adapted from Bon Appetite Magazine
Yields up to 8 cocktails

Ingredients
For the Ginger Syrup
1 cup finely chopped peeled ginger
1/2 cup sugar

For the mocktail
club soda
lime slices for garnish

Directions
Make the Ginger Syrup—Do ahead
Bring the ginger, sugar, and 2 cups of water to a boil in a small saucepan. Allow it to simmer on the lowest setting for about 15 minutes. Remove the syrup from the heat, cover, and allow to steep an additional 30 minutes.

Strain the syrup through a fine-mesh sieve or cheesecloth into a jar and discard the ginger. Allow the syrup to cool completely. You will have approximately 2 cups.

The Ginger Syrup can be made up to 1 month ahead. Cover and store in the fridge.

For one cocktail
Ingredients
1/4 cup ginger syrup
1/2 cup club soda
lime slices for garnish

For each drink
Fill an Old-Fashioned glass with ice. Pour in the ginger syrup and club soda and stir to combine. Garnish with a lime slice.
