Here’s our list of four New Years champagne recommendations from our Wine & Spirits Department to make your New Year’s Eve sparkle!

Champagne Bollinger Special Cuvée $89.99
This genuinely special cuvée is a champagne for celebration. This complex bottle is best shared with people we love and people who love nice things. It has been called a poor man’s krug and has made several cameos in James Bond movies over the years.

Bollinger’s Special Cuvée Special Cuvée is the fruit of a precise blend of several harvests and above all of reserve wines. It is composed of over 85% Grand and Premier crus of the three main Champagne varieties: 60% Pinot Noir, 25% Chardonnay, and 15% Meunier. It is cellar-aged for twice as long as required by appellation regulations. It is moderately dosed at between 7 and 8 grams per liter.

Since 1829, Champagne Bollinger has been making great wines with a powerful, refined, and complex style, expressing the aromas of the fruit in all its dimensions.

Eye
A golden color, distinctive of black grape varieties. Very fine bubbles.

Nose
A wonderful aromatic complexity; ripe fruit and spicy aromas. Hints of roasted apples, compote, and peaches.

Palate
A subtle combination of structure, length, and vivacity. Bubbles like velvet. Pear, brioche, and spicy aromas, notes of fresh walnut.

Pair
Pair with all fish, especially sushi and sashimi, shellfish such as shrimp, prawns, crayfish, grilled lobster, poultry and white meat, cashews, parmesan, or prosciutto.


Bourgeois-Boulonnnias Champagne Brut Premier Cru $39.99
A great value for a really good champagne—it is worth every penny. It hits all the taste points harmoniously, even hinting at the elusive autolytic (bready) character. The assemblage for this wine is sourced from a 2016 harvest as well as reserve wine with 80% Chardonnay and 20% Pinot Noir.

House
This estate has been in the family for many generations. All of their plots of vines are ranked as Premier Cru. The vines are 50 years old, producing small but high quality yields.

Eye
This champagne has a beautiful yellow robe with tints of light straw color.

Nose
The nose is expressive with notes of apricot and browned apple.

Palate
The palate is generous and structured, offering depth and complexity. Red apple, pear, cherry, coffee, caramel, hazelnuts, pastry, and spice. Long, elegant, complex finish

Pairing
Ideal as an aperitif, or paired with cheese, caviar, crab, or white fish.


Two Vara Sparkling Wines by Laurent Gruet $19.99

House
These sparkling wines are crafted by legendary winemaker Laurent Gruet (formerly of Gruet Winery) in New Mexico. In 2020, Laurent left that winemaking role and joined his friend and colleague at Vara. Here he is allowed the freedom to create, explore new varietals, and bring his 32+ years of winemaking experience to a peak among the circle of Vara.

Vara is a salute to Spanish winemaking heritage. The history of wine in New Mexico is over 390 years old. Vara produces wines from Spanish grape varietals grown in Spain and various American vineyards.

Silverhead Brut
Crafted by legendary Laurent Gruet, this wine has almond, pear, and apricot aromas. The mousse is creamy on the palate. Light in body with refreshing acidity. Lively and fresh with a nuanced, creamy mouthfeel. You are going to love it from the first sip.

Composed of 72% Chardonnay, 25% Macabeo, and 3% Syrah.

Eye
Beautiful summer wheat color with persistent stings of tiny bubbles.

Nose
The classical méthode champenoise aromas of almonds, pears, apricots, and grapefruit blend with unique chamomile florals and wet stone minerality from the addition of Spanish grapes.

Palate
The mousse is creamy on the palate, light in body, and with a refreshing acidity. The complex array of fruit, citrus, floral, and toasty flavors are showcased by a balanced dosage and linger to a very long finish.

Pairing
Pairs well with all the sparkling wine recommendations such as cheese, fish, sushi, and can be enjoyed on its own as an aperitif.

Silvered Brut Rosado
Bright American sparkling with early spring berry notes and a surprising floral finish made from Syrah grapes. Fruit-forward, crisp, dry, and refreshing. A happy hour favorite.

Eye
This wine has an abundance of lively, tiny bubbles against a vibrant pink background.

Nose
Aromas of raspberries, wild strawberries, hibiscus flowers, and earthy green tea notes.

Palate
A balanced, dry, traditionally styled sparkling wine presents a creamy mousse and lively acidity. It showcases a complex range of flavors including tangerines, ripe strawberries, fresh shortbread cookies, and almonds. The length of flavors is long, the finish crisp and mouthwatering.

Pairing
This wine has the structure to be enjoyed alone and to enhance richer foods such as roasted duck, risotto, mushrooms, and desserts. And, can be enjoyed on its own as an aperitif.
